Seared Zesty Basil Halibut

A Halibut’s flaky white meat makes it one of the best versatile fish that one can cook! Summer time means light, zesty meals that can be shared on the patio with friends. Here is an easy but tasty recipe that will impress your guests the next time you bring your halibut catch to the patio table!

Ingredients:

  • 3 tablespoons unsalted butter
  • 1 teaspoon of fresh lemon juice
  • 1 tablespoon of fresh or jarred minced garlic
  • ¼ teaspoon of slat
  • ¼ teaspoon of dill
  • ¼ garlic powder
  • ¼ teaspoon of black pepper
  • 1 ½ tablespoons chopped fresh or dried basil
  • 2 halibut fillets

Directions:

Zesty Basil Butter:

Combine the butter, lemon juice, garlic, dill, sal, pepper and basil into medium saucepan and simmer over low heat stirring it until the butter melts. Keep covered and allow simmering on VERY low heat. (Don’t burn the butter)

In a large skillet heat the oil over medium heat. Season the fish with salt, pepper, and garlic powder. Cook the fish on medium high heat in skillet for about 3 minutes; turn and cook until opaque, 3 minutes more.

In the saucepan, spoon the Zesty Basil Butter over the halibut fillets. Cook for 1 minute and then remove to plate. Allow the fish to rest for 2 minutes prior to serving.

Serve dish with side salad or fresh garden greens.
